2 nashi
1 lemon, juiced
1 lebanese cucumber, julienned
1 red pepper, julienned
1 bunch watercress, leaves picked
Dressing
2 tbs soy sauce
2 tbs Shao Hsing Chinese rice wine
1 tsp minced ginger
2 tsp sesame oil
2 tbs fried shallots

½ cup red rice vinegar
½ cup mirin
1 tbs honey
1 tbs hoisin sauce
1 tsp sesame oil
2 cloves garlic, finely chopped
