Pizza Topping


-2 red onions, finely sliced
-3 tbs olive oil
-2 nashi, finely sliced
-8 slices prosciutto
-80 g crumbled mild blue ---cheese
-handful of rocket leaves, to-- serve

Pizza Dough


-400g “OO” flour ------(available from all good ---supermarkets)
-1 tbs active dry yeast
-1 tsp salt
-1tbs olive oil
-1 cup water

Pizza Dough

To make dough, mix flour with yeast and salt. Mix oil with lukewarm water and slowly add to flour. Knead for about 10 – 15 minutes until well mixed. Allow to prove in a covered bowl in a warm place until doubled in size, about 1 ½ hours. Punch down and allow to rise again, about 30 minutes before using.

Pizza

Preheat oven to 250C.

In a small frypan, cook onion in oil until softened, continue cooking on a slow heat until well caramelized, approximately 10 minutes.

Divide pizza dough in half. Roll out on a lightly floured, flat baking tray.

Spread over half the onion mix, add half the sliced nashi, prosciutto and blue cheese. Repeat with remaining ingredients.

Bake on the top shelf of the oven for 12 – 15 minutes until cooked and crisp.

Remove and top with some fresh rocket leaves and serve.

Note: Substitute pizza dough with pita bread and reduce the cooking time to approximately 5 – 7 minutes.
